As winter’s chill deepens, a quiet stillness has settled over the air in Kanazawa.  

Kenko Shokukobo Takano will be fully closed from next week as we begin preparations for our annual New Year’s “Osechi.”  

We sincerely thank all of you who visited us this year, and those who sent warm words from afar. Your encouragement and connection mean so much to us.

⭐ Final business day of the year: Monday, December 15 (closing once sprouted brown rice is sold out)  
※ On this day only, we expect to close early during lunchtime once sold out.

It has been our joy to share peaceful meals with you throughout the seasons.

At my restaurant, I occasionally hear:

“It’s very gentle.”
“I expected stronger flavor.”

Not as criticism — but as a reflection of how deeply taste is shaped by memory, upbringing, and environment.

For 26 years, I’ve run a natural food restaurant in Kanazawa, Japan, preparing seasonal, plant-based dishes rooted in traditional Japanese sensibilities — subtle flavors, seasonal rhythms, and nourishment for both body and spirit.

In regions where spices support digestion, cool the body, and preserve food, seasoning naturally becomes vibrant, layered, and aromatic.
For guests raised within these traditions, Japanese cuisine can feel unfamiliar at first — comforting, yet gently restrained.

Guests from places where ingredients are highlighted gently — including Taiwan, Korea, parts of China, and many Western countries — often resonate with the idea of flavor through simplicity and seasonal balance.

Science shows taste isn’t just preference — it’s also biology and heritage.
For example, gut bacteria enabling seaweed digestion in Japan, or genetic differences affecting cilantro perception.

わたしの店は、自然食系穀物菜食の料理でヴイーガンの方も安心頂いてお食事頂ける「食堂」を営んでいます。

「食堂」気の張らない店であり、作り手は男である為かこのような店では珍しく利用されるお客様の男女比は同じであり、老若男女隔たり無くご利用頂いている店です。

 「食堂」赤ちゃんや小さなお子様を連れてのお客様も歓迎しております。

 金沢市で開業したのは２０００年からで、２３周年を迎え、北陸で長く営むことが出来ている店の一つです。

 今までたくさんのご縁を頂いていますが、自然食、穀物菜食、玄米菜食、ベジタリアン、ヴィーガンを求めるお客様でも、百人百様の思いや嗜好と志向と想いがあり、お求めになられるものが異なるなかで、少しでも喜んで頂けるようにと精進調理しております。

 都会なら選ぶのに迷うくらい様々なお店があるかと思いますが、都会とは違い求める人も少ない中で、金沢市内には、自然食・ベジタリアン・ヴィーガンに対応している店は「数軒」しかなく、ランチタイム営業だけであったり、不定休のお店も多く、わたしの「食堂」を求めてお見えになられるお客様には、店主都合による急な臨時休業や売り切れによる早仕舞いなどでご不便をおかけすることもあることから、わたしはTwitterは使わない為「食堂」の急なお知らせはInstagramでするようにはしてはいます。

IMG_9781自然食穀菜食の食堂 たかの 昨日のランチは朝方は「ミルクを使わないお野菜のグラタン」で正午過ぎから暖かくなってきたので「レンズマメと大豆ミートを合わせてふわ～っとさせたから揚げ風」をメインに致しました。

２０００年から今の場所で店を始めて早２３年が経ちました。

わたしの作る料理の殆どはわたしのオリジナルの創作料理です。

今まで作って来た料理は数知れず、レシピなどは書き留めず全てわたしの頭の中に入っている私にしか作れないオリジナルです。

オリジナルであるからこそ、繁華街から離れた郊外の住宅地の中程のこの店にと足を運んで頂いているのかも知れません。

毎年お作りして県外にも唯一発送している私オリジナルの「おせち」も私にしか作れないもの・・・リピーターの方も多いのです。
